This beautiful drink will take the classic Mojito to a whole new level. With homemade blueberry syrup, you will impress anyone who gets to try this cocktail!

Ingredients
2 oz. white rum
1.5 oz. blueberry syrup
1 oz. lime juice
5 large mint leaves for muddle
1 large sprig for garnish
8-10 blueberries for scattering in your cocktail
1-2 oz. club soda
1 cup sugar
1 cup water
1.5 cups blueberries

Directions
Blueberry Mojito Cocktail
In cocktail shaker, muddle the blueberry syrup, lime juice and mint
Add rum and fill with ice
Shake for 30 seconds and strain the cocktail into a pint glass or mason jar filled half-way with ice
Drop in your blueberries for garnish
Top off with club soda and add more ice if necessary
Homemade Blueberry Syrup
In a medium sauce-pan bring water, sugar and blueberries to a boil. Stirring occasionally. Reduce heat and simmer for about 5 minutes.
Allow sauce to cool before putting in a blender.
Blend well so that there are no bits and pieces are in the syrup. You may add a little more water here to reduce the thickness of the syrup
Store in the refrigerator to cool. Take out of refrigerator 5-10 minutes before using in the cocktail.
