Fresh vegetables lightly roasted for a smoky flavor, with a creamy and delicious yogurt sauce!

Ingredients
1 squash
1 zucchini
2 bell peppers
1 red onion
Oil of choice
Italian herb spices
1 tsp Truffle oil
2 tbsp lemon juice
1 tbsp white wine vinegar
1 cup Greek yogurt
1 tsp minced garlic
2 tbsp fresh dill
Salt and pepper to taste
Creamy Yogurt Dip
Directions
Light Pit Barrel® according to instructions.
Cut all vegetables into 1” x 1” pieces.
Place on either 10” Skewers, 15” Skewers or both.
Brush with oil of choice and drizzle with Italian herbs spices.
Place in Pit Barrel® and cook 30 min or desired doneness.
To make creamy yogurt dressing, squeeze half a lemon and mix yogurt. Chop fresh dill and mix all ingredients. Refrigerate while skewers are cooking.
Serve as a main dish or side.
