🔥 Smoked Elote Chicken Skewers

This is the kind of recipe that screams summer. Smoky chicken, charred corn, creamy elote flavors, fresh lime, and just enough heat to keep you coming back for another bite.
Ingredients

2 lbs boneless, skinless chicken thighs

2 tbsp Pit Barrel® All-Purpose Rub

1 tbsp chili powder

Juice of 1 lime

2 tbsp olive oil

3 ears corn, grilled and kernels removed

1/4 cup mayonnaise

1/4 cup Mexican crema (or sour cream)

1/2 cup cotija cheese, crumbled

1 tsp chili powder
-
Juice of 1 lime

2 tbsp chopped cilantro

Extra cotija cheese

Cilantro

Directions
Cut chicken thighs into large chunks.
Toss with olive oil, lime juice, All-Purpose Rub, and chili powder. Let marinate for at least 30 minutes.Thread chicken onto Pit Barrel® Stainless Steel Skewers.
Cook in the Pit Barrel® Cooker until the chicken reaches an internal temperature of 175°F and develops a beautiful smoky finish, about 45–60 minutes.
Make the Elote Mixture:
Combine grilled corn, mayo, crema, cotija, chili powder, lime juice, and cilantro.Remove skewers from the cooker and spoon the elote mixture over the chicken.
Top with extra cotija, cilantro, and a squeeze of fresh lime.
Serve immediately.
