Ingredients
(1) Chuck Roast
Guava Paste
Beef Stock
1 Green Apple
1 fennel bulb
1 jalapeño
¼ green cabbage
1 tbsp mayo
1 tsp poppy seed
1 lemon
1 tbsp sugar
½ tsp white pepper
salt to taste
Green Apple and Fennel Slaw
Directions
Guava Glazed Chuck Roast
Light your Pit Barrel® according to the instructions and install the grill grate
In a saucepan, bring 8oz of guava paste and 8oz of beef stock to a boil
Rub chuck roast with warm guava jam and season with salt
Secure the lid and cook until internal temperature reaches 165° (approx. 2 hours)
Wrap in foil with more guava jam mix and cook with lid closed until internal temperature reaches 215°(approx 3 hours)
Remove from Pit Barrel® and let rest wrapped for 15-30 minutes
Shred and serve with green apple and fennel slaw
Green Apple and Fennel Slaw
Deseed jalapeño and finely mince.
Slice fennel, green apple and cabbage into thin shreds.
In a separate bowl, add together all remaining ingredients plus the jalapeño to make the dressing.
Mix everything together and store in fridge for at least 20-30 minutes before serving.
