When you think of fall, pumpkin spice comes to mind! Typically it's a delicious additive to coffee, but these ribs will bring a whole new meaning behind Pumpkin Spice! Check out this recipe for delicious Pumpkin Spice Whiskey Ribs!

3 racks of pork spare ribs
1 jar pumpkin butter
5 tbsp butter
1/4 c brown sugar
Bushwick Kitchen Trees Knees Spicy Maple
2 tbs brown sugar
1 tbsp ground coffee
1 tbsp pumpkin pie Spice seasoning
1 tbsp kosher salt
2 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp ground cinnamon
1 tsp smoked paprika
1 tsp ground cumin
1 c brown sugar
1 c killer hogs vinegar sauce
1/4 c Bushwick Kitchen Trees Knees Spicy Maple
2 oz Whistle Pig whiskey
1 tsp pumpkin pie spice seasoning
Pumpkin Spice Coffee Rub
Pumpkin Whiskey Glaze
Directions
Trim and remove the membrane from the ribs.
Apply Pumpkin Butter all over the ribs as a binder.
Season both sides of the ribs with the Pumpkin Spice Coffee Rub.
Light Pit Barrel® Cooker according to lighting instructions.
Place a hook through ribs. Place the hooked ribs on the rebar in the Pit Barrel® Cooker.
Smoke the ribs for 2 hours and then wrap in double layer of foil. In the foil place: brown sugar, 5 pats of butter, and one line of Trees Knees Spicy Maple. Place the ribs meat side down on these ingredients and wrap.
Place the wrapped ribs back in the smoker on the grate. Cook the ribs until tender. Anywhere from 30 minutes - 1 hour.
Carefully remove the ribs out of the foil and brush both sides with the Pumpkin Whiskey Glaze.
Place the ribs back on the grate unwrapped in the Pit Barrel® for 10 minutes for the glaze to set in.
Cut the ribs into individual bone pieces, drizzle some more of the Pumpkin Whiskey Glaze, and serve.
Pumpkin Whiskey Glaze
Add all ingredients to pan on the stove. Simmer until all ingredients are combined and it becomes a glaze consistency.
