Take a look at this smoked chicken sandwich that incorporates an avocado sauce, instead of mayo and mustard to bring it all together.
*Serve for lunch or dinner. You can also cut these sandwiches in fourths and serve for the big game as an appetizer.

Ingredients
(4) avocados
(2) limes, squeezed
(1/2) bunch of cilantro
(1) clove of garlic
salt and pepper to taste
(2) chicken breasts, boneless/skinless
(8) slices of whole wheat or whole grain bread
(2) tablespoons of avocado sauce, per sandwich
(1/2) head of green leaf lettuce
(1) tomato, sliced - 2 slices per sandwich
(24) bread and butter pickles - 6 per sandwich
hot sauce (Optional)

Directions
Take the boneless, skinless chicken breasts and season them on both sides with your favorite BBQ seasoning
Light your Pit Barrel® Cooker according to our lighting instructions
Stick your ThermoWorks thermometer into the thickest part of the breasts and hang until internal temperature is 162 degrees. Rest for 5 minutes. During this time, the internal temperature will rise to 165 degrees
*Make sure your chicken breasts reaches 165 degrees. This is the food-safe temperature for consuming poultry
Once rested, Slice the chicken breasts and set aside.
Slice tomatoes and lettuce
Slather your bread slices with avocado sauce
Add sliced chicken, lettuce, tomatoes and pickles to one side of the bread
Add hot sauce on top of ingredients
Put the sandwich together and slice in half
*Hot Tip* swap out those salty chips and serve with fresh tomato slices dashed with a little kosher salt.
