    Here are a few examples to reference for the cooking capacities of the 3 models:

    14" Pit Barrel® Junior: (6) racks of ribs, (1) pork butt/shoulder, (1) full packer brisket, (6) chicken halves, (1) 17lb turkey.

    18.5" Pit Barrel® Cooker: (8) racks of ribs, (2-3) pork butts/shoulders or briskets, turkey hangers allow for (2) 13-16 lb turkeys.

    22.5" PBX: (16-20) racks of ribs, (4) pork butts/shoulders, (4) full packer briskets, (12-16) chicken halves, (60+) party wings or (4) turkeys with use of our poultry hangers.

To get the most out of your Pit Barrel® Cooker, consider these expert tips:

  • Use the right amount of charcoal: Start with the recommended amount and adjust based on your cooking needs. Follow our lighting process for the most consistent results. 9 times out of 10, if there is an issue with temperature, it lies in the lighting process.

  • Though we do not recommend the use of wood chunks, you can take a small handful of dry wood chips and evenly distribute them over the lit charcoal right in the Pit Barrel® right before you are going to hang your food. We do not recommend the use of wood chunks in the Pit Barrel® because it can have adverse effects towards the operating temperature of the barrel and can potentially give your food an acrid flavor.

  • Master the hook-and-hang technique: Proper hanging ensures even cooking and beautiful presentation.

  • Let the cooker do the work: Resist the urge to constantly check or adjust your food. This will cause the temperature inside of the barrel to spike if you are consistently lifting the lid.
